Oxidation changes in argan oil caused by heating and UV irradiation

The subject of the study was argan oil. The composition of fatty acid in oil was determined using an SRI 8610C gas chromatograph; also the characteristic numbers, including the peroxide, anisidine, acid and iodine values were determined. Oil samples with a volume of 200 cm3 were heated at the temperatures of: 60, 80, 100, 110, 120ºC without irradiation, and after UV irradiation for 60 minutes. Measurements of the peroxide value during heating were used to determine the oxidation changes.  An increase in the peroxide value PV is observed in argan oil with an increasing temperature. This confirms the formation of hydroperoxides in oil. The most significant changes in PV were observed in oil samples heated at 110ºC and 120ºC. The curves of changes in PV = f(t) were linear for the temperatures of: 60ºC, 80ºC, 100ºC. They were described using a function for order zero. The curves of PV = f(t) at 110ºC and 120ºC were non-linear, and described by a growing convex function. They were described using a function for order one. The processes studied were characterised by varying dynamics. This was confirmed by the rate constants wo and w1, and the K ratios of these constants.   
Stability periods were calculated for oil samples heated at the given temperatures, and subject to UV irradiation prior to heating. Based on the completed study, it was demonstrated that both an increase in temperature and irradiation result in a clearly shorter stability period of argan oil
