Antiradical activity of ciders

Summary

In this work we describe results of our experimental study on the total phenolics content as well as the antiradical activity of several ciders present on Polish market. Antiradical properties of ciders were determined by means of spectrophotometric method of phenolics content determination as well as using the kinetic measurements of DPPH• radical quenching process in the presence of the various amount of cider samples. It was found that based on the graphs of experimental values of the initial rate of the quenching process of DPPH• radical plotted versus antioxidant concentration one can determine the relative antioxidant activity of the cider samples at the same concentration. We have found that the total phenolic compounds content determined for the tested cider samples does not correlate to their antiradical activity.
