Quality assessment of the strawberry sorbets available in Polish market

Summary

The aim of the study was to evaluate the quality of strawberry sorbets of three different brands (from three different producers) available on the Polish market. The pH, total extract, dry matter, melt, overrun, colour and organoleptic evaluation were determined. Sorbet B had the most intense acid taste, sorbet C and A a little less, which coincided with the acidity of these sorbets’ results. The content of sucrose in all analysed products did not exceed 29%. Sorbet A was distinguished by the highest overrun and the lowest melt, was rated as the most tasty. The results obtained in the research proved that the examined products differed in terms of physicochemical and organoleptic qualities.
